Warm & Cheesy Dip


This recipe came from Debby. We met Debby and her partner Scott in Bermuda. These Aussies sail a 34 foot Austrian made boat called Expedition. After Bermuda we headed for the US east coast and they hopped across to Portugal and Spain for the northern hemisphere summer. I made this quite frequently as it was warming on those crisp Maine & New England nights.

Ingredients

·      Cream Cheese
·      Can of black frijole beans
·      Jar of chunky salsa (juice drained off)
·      Grated cheddar cheese

Method

Layer the ingredients in an oven proof dish in the order listed, i.e. cheddar cheese on top. Bake until warmed through. Serve with corn chips. Yum.

Special Note:

Drain the salsa well as all the juice will collect on the bottom of the dish and make it sloppy.
Another Special Note.
This dish does not look appetizing one people start to dig their corn chips in. So keep the lights low.

After the US east coast we returned to the Caribbean as did Expedition. Here is Debby on Perigee in Sint Maarten proudly displaying her one litre Portuguese red wine in a tetra pack that cost her 99 EUR cents. She loves a bargain.

Perigee in Paradise.  Two years, eight months and one day after moving onboard Perigee we found paradise! We moved onboard on February 16, 2017 in Le Marin, Martinique one of the Caribbean Islands and found our paradise on October 17, 2019 in the Raroia lagoon, one of the Tuomotu Islands of French Polynesia. We put 12, 548 nautical miles under the keel in that time and spent many hours preparing Perigee for this kind of remote area cruising. Raroia Atoll (Rah-row ee ah). We're the red arrow top right. The entrance is in the middle of the west side. Raroia is remote, being as it is pretty much in the middle of the Pacific Oceans. Harry Honda

Harry Honda is our trusty electric start 9.9 hp, 4 stroke outboard motor. We bought Harry in Newport, Rhode Island shortly after we bought Perigee (October '16) and while we were not looking for a 4 stroke electric start motor, Harry had been abandoned by his previous owner after just 20 hours of use and was available at the right price. Dave wanted a 2 stroke 15 hp motor but 2 stroke motors are no longer available in the US. I was not disappointed with Harry, he is a quiet running, sweet smelling, push to start motor in an attractive silver colour that matched the dinghy. Not that colour matters. We take delivery of Harry and the dinghy Nov '16 In April 2017 while in Bequia, St Vincent & the Grenadines we decided to get protective chaps made for our dinghy.
